Eggs!

For some reason this summer eggs, in many wonderful varieties, have been finding their way into almost all my meals. Maybe its the heat making me lazy but the possibilities with eggs is endless!
There are many dishes that you can produce quick and easy. Lately a lot of my lady friends have been making the most amazing quiches. I have been lazy and mostly making just scrabbled. Eggs are a great source of protein and easy to jazz up. With my scrabble I usually add tons of cheese, spices, and a little Oj. Chopping up some veggies is a must and really takes the meal to the next level. I will be experimenting with quiches this week. Reports to follow!

Quinoa


Quinoa! yum yum yum. My favorite grain. I first had this stuff on a vacation with my sisters parents. We were sitting in Maryland somewhere and for dinner we had quinoa chilli! What?! Yes it was delicious.
Since the green-health movement this stuff is crazy available, just look for it next time you're at trader joes or a health food store. Its appearance is very similar to cous cous, and it cooks very similarly, as well as its taste, bland. Its texture is what makes it my favorite grain and it also is what makes it so gosh darn healthy. This grain, which can be traced back to the Incas, who held the crop to be sacred, referred to quinoa as 'chisaya mama' or 'mother of all grains', and it was the Inca emperor who would traditionally sow the first seeds of the season using 'golden implements'. High in protein and fiber this grain is bland but takes on wonderful flavors.
Last night I made quinoa as a side for some scallops. Heres the recipe:
2 parts quinoa to 1 part water, cook.
Caramelize onions and stir in. Add seasonings, I used Italian, siracha, pepper, olive oil and a clove of garlic. Stir in veggies if your heart desires and done. Quick & Easy.
Try playing around with quinoa, its a follower of many flavors.

Vegan Curry

I tried and succeed! I made my favorite Curry without my normal sauteed chicken and just went nuts with veggies. For this delicious curry(which happened to turn out vegan) you will need the following:
-1 shallot diced
-As much Garlic as you desire(4 for me)
-Frozen: Broccoli, Edamame, Corn, Red Peppers, Peas
-1 stalk celery diced
-1 can Dark Red Kidney Beans
-Mandarin Oranges to taste
-1/2 bottle Trader Joes Red Curry Sauce
-Sriracha/Pepper/& Garlic Powder
-Brown Rice
Start off sauteing the shallots until translucent, I like to caramelize everything so I added some maple syrup to them, add the garlic. Next add all the veggies your heart desires and allow them to become unfrozen(?). After, add the sauce & spices and simmer. Stir in the kidney beans(strained). Allow to simmer. Pour over brown rice and garnish with Mandarin oranges. Enjoy!
